Pork carnitas cooked to perfection
We just had the best pork carnitas - ever. It was a little going away party. They called it hurry back soon. Fernando at Hotelito Rinconcito did the cooking and Fernando who owns the hardware and building supply store in Villa del Mar furnished the pig. Fernando has a secret to his cooking sauce that he will not disclose. Maybe it's the copper pot, the open fire, the company, the fresh pork, whatever it was, it was delicious and special. Something we will not soon forget. We are traveling for a couple of months and already miss Mayto. It is an amazing place, and the people are special.
